The Evo Oil the basis of the Mediterranean cuisine… maybe, at the beginning, we all think about pasta, or meat and fish, or vegetable … but, before that, we mean the extra virgin oil!

As the International Olive Council states, row and cooked food normally requires a seasoning, it’s usually the extra virgin oil.🫒

Even if the recipe proposes the use of butter, most of the time evo oil is a valid substitute, from stater to dessert, with rare exceptions.

A few example. From the exotic chickpea hummus to simple garlic bread; from some regional recipes of Italy with several kind of pasta to the Spanish paella dish; shrimps skewers and meat fillets from Italy, Spain, Portugal, Malta, Greece and Tunisia.
Do not forget pizza and focaccia.
Speaking about a dessert, castagnaccio cake, which is cooked with evo oil, is outstanding; even a “panettone” can be prepared with oil instead of butter (and it is very tasty, try it!).

The extra virgin oil is healthy and, moreover, enhances the other ingredients of the dishes, affecting the final taste.
