Can oil have defects?

Can oil have defects? Yes it can, like every food product, in case its processing is not performed with care, step by step.

Here some possible defects:

  • Winey taste: when the olives are not picked with care, they can be broken and this can cause the beginning of the fermentation: acetic acid is formed and this gives the oil a taste similar to sour wine
  • Cooked flavor: similar to the flavor of cooked legumes, it is due to an overcooking of the olives paste, during the processing
  • Metallic taste: typical of oil that has been left in contact for long periods with metal surfaces, during the mechanical extraction
  • Sludge: with oil which has been in prolonged contact with sediments on the bottom of the containers, the smell is not frank. Unpleasant smell can be perceived because of impurities and sediments.
  • Rancid: bitter smell and sour taste, it is a reminiscence of stale walnuts. It is due to light and oxygen contact
  • Rotting: if the olive are too much piled and start fermentation in absence of oxygen, oil could smell musty

Every step must be done carefully in order to avoid that oil can be compromised by unpleasant smells and tastes.

My job always requires a lot of effort, with my plants, the harvest of my olives, the actvity at the oil mill and the bottling.
And I can assure that I pour all my efforts in it, because I want to give an oil of excellent quality.
