Autumn recipe: hot cream of pumpkin

🍲The hot cream of pumpkin is a first course with many qualities: a vegetarian light, tasty, healthy with seasonal food, not to mention it is quick to prepare, which never hurts.

It is more than enough reason to go straight to this autumn recipe, get on the stove and enjoy the dish.

1 🎃 pumpking, delica variety
2 🫒 extra virgin oil
3 leeks
4 vegetable broth
5 cream or ricotta cheese
6 nutmeg
7 salt & pepper

Cut the pumpkin into cubes, fry it together with the leeks cut into slices and soften it with the vegetable broth.
Once it is soft enough (test it with a fork), add the cream (or ricotta) and mix the pumpkin with a mixer, to obtain a soft and creamy soup.
Put the pumpkin on the fire (slow) for a few minutes with a sprinkling of nutmeg, salt, pepper.
Adding more broth, this creamy soup meet the taste of those who prefer a more liquid consistency.

The pumpkin smooth is quite ready… the finishing touch is a spoon of raw extra virgin olive oil.

Both the pumpkin and the oil must be of excellent quality, if you want to obtain a very good dish.
