There are a lot of tasteful recipes for everyone and, clearly, the extra virgin oil is at the basis of many delicious dishes. Pumpkin and sausage risotto is our proposal, this time.

Have a look to the recipe for 4 people:

  • rice – 320 gr
  • pumpkin – 300 gr d
  • sausages – 150 gr
  • vegetable broth with celery, carrots and onions
  • extra virgin olive oil
  • 1 scallion
  • pepper
  • Parmesan cheese

    According to the recipe that Il Cucchiao d’Argento suggests https://www.cucchiaio.it/ricetta/risotto-alla-zucca-e-salsiccia/ , you can add salt, ½ glass of white wine and a tablespoon of butter.

See the steps: fried scallion and two spoons of extra virgin olive oil then, the sausage must be cooked in a pot, chopped and without skin; the pumpkin must be baked in the oven and added to the roasted rice with the oil. All the ingredients have to be cooked with the broth.

Do not hesitate to add a little extra virgin olive oil: our Evo oil is savory but it doesn’t have an intrusive taste.
